Mainly it is important to have a record of Pasqual's mole recipe in the permanence of the internet (tongue-in-cheek?)
Pasqual's is a wonderful restaurant in Santa Fe. Tom and I went there for our second anniversary, and upon returning, I wanted to figure out how to replicate their mole and found the recipe from their cookbook. In fact, it is very difficult even to try. It takes four or five hours. Even to try.
But I did try and just sent the last of it off to a party tonight. We didn't attend the party because the baby is experiencing his first fever, but it put me in mind of making it again someday when I'm using a food processor and not a bullet blender.
